London’s Goring Hotel has confirmed chef Nathan Outlaw’s seafood restaurant, Siren, will open its doors on 12 June.

The project, announced in December, will be the first new restaurant at the hotel in more than 109 years and is designed as a second, more casual option to run alongside its Michelin-starred Dining Room.

Seafood specialist Outlaw, who holds two Michelin stars at his eponymous Cornwall restaurant, has created a menu using produce sourced directly from the region.

Dishes will include cured monkfish with ginger, fennel and yoghurt; turbot herbed and battered with warm tartare sauce and daily specials such as grilled lobster or monkfish to share.

The Goring is also relaunching its bar offer with a resident pianist and new drinks menu focusing on British spirits and herbs from the hotel’s own garden. A selection of small bites will range from crab scones to The Goring Club sandwich, available to both hotel guests and visitors.

Outlaw's move to The Goring comes after he ended his seven-year partnership with The Capital hotel in Knightsbridge in March. The chef launched Outlaw’s at The Capital at the hotel in 2012 and it won a Michelin star soon after opening, but lost the accolade in the 2019 edition of the guide.

He also runs Outlaw's Fish Kitchen in Port Isaac and until January was a partner in The Mariners pub in Rock, which has since been relaunched by Paul and Emma Ainsworth.
