Chosen from a pool of more than 2,400 candidates, 135 young chefs representing 50 countries between them have been selected to take part in the competition’s regional finals this year.
The winners of those heats will then progress to the Grand Finale, which is to be held in June 2020.
Five chefs representing the UK and Ireland – including Joshua Wilde of The Coach, and Timothee Martin of The Greenhouse in Mayfair – will take part in the UK and North Europe regional heat on 12 November.
They will cook against competitors from Denmark, Netherlands, Norway, the Isle of Man and Sweden, with Jerome Lanmark Calayag of The Ledbury representing the latter.
Now in its fourth year, the S.Pellegrino Young Chef competition champions young professional chefs under the age of 30 who have worked in the industry for at least a year.
Competing chefs were selected primarily on the strength of a signature dish that is meant to demonstrate ‘unrivalled technical skills as well as genuine creativity’, which they will continue to refine throughout the Young Chef process.
