Further Fat Duck alumni join Trivet restaurant team

Two further Fat Duck alumni have joined the team at Trivet, the London restaurant from Jonny Lake and Isa Bal opening this autumn.

Italian-born Michele Stanco has been named as head chef, while Australian Melissa Fergus will be restaurant manager.

Stanco met Lake after moving to the UK to work in the pastry section of Heston Blumenthal's Fat Duck in Bray. He was later promoted to sous chef and was part of the restaurant’s temporary relocation to Australia in 2015.

Fergus is originally from Melbourne and met the team during its stint down under. She later moved to England to join the team in Bray as a junior waitress, progressing to assistant manager before leaving in 2018.

Bal was head sommelier at The Fat Duck, while Lake was executive chef and also oversaw Blumenthal’s Hind’s Head pub and The Crown at Bray. The pair left the restaurant in early 2018 before revealing their plans for Trivet​, which will showcase “ingredients, dishes and drinks from different regions around the world”.

Trivet will open in Bermondsey this autumn, in the former Londrino site.
