Adam White is relaunching his well-known Bermondsey venue Village East as Loyal Tavern in partnership with former Duck & Waffle executive chef Tom Cenci.

Billed as a vibrant neighbourhood restaurant and bar, Loyal Tavern is expected to open early next month and will showcase ‘inventive small plates, brought about by a love of local sustainable ingredients’.

The former textile factory’s interior is to be given a makeover, and will have 100 covers, two bars and a private dining room.

Cenci’s launch menu includes Cornish mackerel with apple, pine nut and truffle; and venison tartar with beef dripping. Example dishes from the proposed daily specials menu include rib of retired dairy cow and gurnard with crab bisque, carrot and seaweed.

Cenci cooked at London’s Noble Rot and Michelin-starred Restaurant Laurent in Paris before joining Duck & Waffle as senior sous chef ahead of the sky-high restaurant’s opening in 2012.

He worked alongside then-executive chef Dan Doherty to develop the menu, which included ox cheek doughnuts and foie gras crème brulee.

During his tenure Duck & Waffle ranked 29th in Restaurant magazine’s National Restaurant Awards top 100 list in 2016.

White is the co-founder of House Café Company, which also operates all-day dining restaurants Rail House Café in Victoria and Riding House Café in Fitzrovia.
