Indie operators in Leeds launch Kickstarter to open pasta restaurant together

Two independent operators in Leeds are joining forces to launch what they describe as the city centre’s ‘first dedicated pasta restaurant’.

The owners of Laynes Espresso bar and The Brunswick pub in the city have set up Sarto together, which is due to open in the autumn at Munro House in Leeds’ former Arts Quarter.

Despite having already signed the lease on a site, the owners have now launched a Kickstarter to help raise funds to help ‘provide the final touches Sarto needs’

“The idea grew out of a conversation I had with The Brunswick guys,” says Dave Olejnik, owner of Laynes Esperesso and co-founder of Sarto.

“We were under no illusions that a new venture would be pricey, but this joint project needs investment to take the finish up a level and make sure Sarto ends up being not just good but great.”

There will also be a series of Sarto pop-ups at Laynes that will feature a number of the dishes expected to appear on the menu, including tagliatelle with lamb shoulder ragu, ricotta and mint; pici with breadcrumbs, summer squash purée and sage; and truffle arancini.

The team are hoping to raise £15,000 through the Kickstarter​, which is already live and will run for another 16 days.
