Brooke opened his debut Burra Khana in Nottingham, in September, and told MCA at the time he was considering a second opening, but was keen not to open a chain and was instead considering opening a site inspired by it under a different name.
The site is due to open in March above the existing Red Dog Saloon on Bold Street, Brooke tells MCA.
“It will either be called Burra Khana or Shebang,” he says.
The menu at Burra Khana is inspired by street food dishes in Delhi and Jaipur, as well as the traditional cookery techniques of Middle Eastern countries such as Persia, Turkey and Lebanon.
Brooke adds that he plans to revise the offer at Red Dog Saloon on Berwick Street in Soho, following its temporary closure due to a fire earlier this summer.
He says the restaurant will reopen (timetabled for January) under the same name, but the concept would be based much more around traditional smokehouse dishes, than all-encompassing American-style fare such as burgers and wings.
“Red Dog’s cuisine is everything American and this will be more of a smokehouse,” he explains.
“The restaurant is very small so we are not going to do such a big menu as at the larger sites, and it will be a bit more refined and focused on barbecue dishes.”
Brooke says there were currently no plans to tweak the Red Dog offering at its other sites in Hoxton Square, Liverpool, Nottingham and Southampton.
“Red Dog is doing amazingly well at the moment, it’s had a real renaissance. I think a lot of the competition has gone,” he adds.
