The husband-and-wife team behind Wales-based Spanish bar and restaurant group Ultracomida are to open a second site in Cardiff bringing their total number of venues to four.

Paul Grimwood and Shumana Palit expect to launch Vermut early next year on Guildhall Place and say it is inspired by the casual late-night bars found in Madrid.

Taking its name from the Catalan for vermouth, the 30-cover will serve sherry, sherry-like wines from the DO of Montilla-Moriles and the titular vermouth.

It will also offer a small food menu centred around charcuterie, cheese and tinned and cured seafood.

“Vermouth is a classic drink of Catalonia, but it has enjoyed a real revival in recent years. It’s a similar story with sherry and wines from Montilla-Moriles, which for a long time were considered very old fashioned but are now being celebrated for how fantastic and versatile they are,” says Palit.

We’re really excited about showcasing both, and about replicating the atmosphere of those brilliant, Spanish hole-in-the-wall bars that we love, right in the heart of the Welsh capital.”

Ultracomida operates pinxtos bar Curado in Cardiff and two Ultracomida deli-restaurants in Narberth and Aberystwyth.
