Sugo launches crowdfund with aim to create Italian street food chain

Italian street food trader Sugo has launched a crowdfunding campaign to support the opening of its first bricks and mortar restaurant in London.

The team is looking to raise £20,000 on Kickstarter to launch a site on Sayer Street in Elephant and Castle in February or March, with the ultimate goal of expanding in to a larger chain.

Sugo was founded by Matteo Grasso in 2017 in a bid to break down the ‘pizza and pasta’ stereotype of Italian restaurants.

Grasso told BigHospitality: “Our long-term ambition for Sugo is to open multiple fast casual restaurants and become the first Italian street food chain, with a goal to change the way Italian food has been perceived in the UK.”

Sugo trades from trucks at Vinegar Yard in Bermondsey and in Shepherd’s Bush, with a menu items such as chickpea fries; mushroom and truffle arancini; and rice boxes or homemade sourdough panino’s with fillings including lamb ragu; slow-cooked garlic broccoli, pepper, tomato and olives; or ‘melting meatballs’.

The Elephant and Castle site will feature chefs cooking on open counters, and a menu of Italian craft beers.

Sustainability will be a major focus, with Sugo claiming its motto is ‘zero beef, zero plastic, zero waste’.

The crowdfunding campaign has until 8 February to meet its goal.
