Ferdinand ‘Budgie’ Montoya to launch Sarap restaurant residency in Brixton

Chef Ferdinand ‘Budgie’ Montoya is set to launch a six-month residency for his Filipino barbecue and lechon concept Sarap in Brixton Village at the end of the month.

The Market Row site will have space for approximately 25 covers, with Montoya hoping the restaurant will help ‘carve out an identity for the hugely underrepresented cuisine of his homeland’.

Montoya, who won the residency having triumphed in the ‘experienced’ category of the Brixton Kitchen competition last year, plans to establish a permanent home for Sarap in Brixton in due course. 

Sarap’s menu will feature a combination of sharing plates, with its signature dish being a take on Cebu lechon that features rolled and stuffed slow-roasted pork belly served with liver sauce, spiced coconut vinegar and atchara pickle.

Montoya, who grew up in Sydney, Australia, first established Sarap as a supper club in 2017.

It has previously operated residencies at The Duke’s Head in Highgate and The Sun & 13 Cantons in Soho.

“After three successful residencies, we are so excited to have finally found a site in Brixton Village to settle in,” says Montoya.

“This will allow us to have a base where we can progress and really spread our wings, serving the food and drink that we know best.

“Most importantly, it means our customers new and old will be able to find us whenever they want their Filipino food fix.”
