The team will be joined at the development by Pomelo, a British tapas bar from the chefs behind Lupins restaurant in Borough, when it opens in March.
Rounding out the final line-up of operators is vegan fast food brand Temple of Seitan, which offers plant-based burgers and fried ‘chick’n’.
Sushi on Jones launched at Bowery Market in New York’s NoHo in 2016 and claims to be the city’s first al fresco omakase bar, offering 12-piece tastings in 30 minutes for $58.
It will open in London alongside Breddos tacos and gourmet duck traders Duck Truck, which were announced as joining the Goods Way food hall last year.
Goods Way is backed by Ben Lovett, a founding member of the band Mumford and Sons, and will also feature an 'American-style' bar and 600-cover live music venue named Lafayette.
Lovett’s Venue Group also runs Flat Iron Square and live music venue Omeara in Borough.
