A total of 187 backers helped the group raise £20,206 on Kickstarter, which will be used to launch a fast-casual concept in London’s Elephant and Castle.
Sugo was founded by Matteo Grasso in 2017 and currently trades from a truck at Vinegar Yard in London Bridge.
Its menu includes open ciabatta sandwiches; rice boxes; arancini; and chickpea fries.
Grasso previously told BigHospitality he was hoping to expand the brand in to a chain, with the goal to "change the way Italian food has been perceived in the UK".
The 400 sq ft site in Sayer Street in Elephant and Castle will see chefs cook on open counters and focus on sustainability, with no plastic or beef used in the restaurant.
