The chef and some of his UK team will be based at Bathers’ Pavilion on Balmoral Beach from 15 July to 30 August.
They'll be serving up a multi-course tasting menu, showcasing L’Enclume dishes with ‘Australian adaptions’ using produce sourced close to Sydney.
Cameron Johnston, head chef of Bathers’ Pavilion restaurant, will work alongside Rogan and his team during the residency and is set to visit L’Enclume in April.
Rogan says: “It’s a dream to bring the L’Enclume experience and ethos to the other side of the world.
"I couldn’t think of a more appropriate place in Sydney to do it. Guests can expect a menu of some of our favourite dishes from L’Enclume, including classics, but with a few seasonal tweaks here and there according to the ingredients we have available to us.”
The chef opened L’Enclume in 2002 and has since grown his empire to five UK restaurants in the Lake District and London, and two in Hong Kong.
Roganic in Hong Kong was the chef's first overseas restaurant to win a Michelin star in 2019, the fifth overall star for the Simon Rogan Restaurant Group.
