Paris Society to establish first London restaurant location on former Joël Robuchon site

French-based hospitality group Paris Society is to open its first London outpost next month, on the Covent Garden site previously occupied by L'Atelier de Joël Robuchon.

A partnership between Guillaume Glipa (former Zuma manager and Chiltern Firehouse food and beverage director) and Paris Society founder Laurent de Gourcuff, Louie will ‘blend the characteristics of New Orleans, Paris, New York, and London’.

The 150-cover restaurant – named after both King Louis XIV of France, and famed New Orleans jazz musician Louis Armstrong – will feature interiors designed by Dion & Arles that ‘play to the cultural and historical references of the prohibition of alcohol, jazz and voodoo’.

New Orleans chef Slade Rushing will oversee the kitchen, which will combine the flavours classic French cooking; New Orleans Creole gastronomy; and New York culinary heritage.

Signature dishes will include ‘deconstructed’ oysters Rockefeller; New Orleans-style barbecue lobster; and banana foster rum baba.

Spread over four floors, Louie will also house an open lounge and bar, featuring live jazz piano and DJ sets inspired by the music of US jazz composer Duke Ellington.

The Paris Society was founded by Gourcuff in 2008, and currently oversees a portfolio of 30 hospitality venues across Paris including restaurants Girafe, Loulou, and CoCo.
