The brand has taken the former Kalifornia Kitchen site at 19 Percy Street for its tenth global location.
Eggslut made its UK debut in Notting Hill last year, serving its signature brioche bun sandwiches filled with scrambled eggs, cheese and bacon.
Bruno Pires, operations manager at Eggslut, says the brand’s success showed eggs are “more popular than ever”.
Eggslut started life as a Los Angeles food truck in 2011 and has since grown to five US restaurants, two in Lebanon, and one each in Japan and London.
ITICO F+B, the company managing Eggslut’s UK rollout, told BigHospitality last year it was targeting around 10 restaurants in London and major regional cities.
