Whatley Manor's Sue Williams and Niall Keating on Paradise Carriage

Sue Williams and Niall Keating have launched a food truck operation within the manicured grounds of their Cotswolds hotel Whatley Manor.

Paradise Carriage was originally located at the Exchange Bar & Kitchen in Hanley, Stoke on Trent, where Keating began the lockdown period using the graffiti-covered trailer to cook and deliver meals to key workers.

Speaking on BigHospitality's latest United We Stand podcast, the hotel's executive chef says the food isn't pitched at quite the same level as Whatley Manor's two star flagship The Dining Room.

"We're just offering simple but very tasty stuff with good ingredients that we can source locally," he says. "It's very reasonably priced. Our take on the Philly cheese steak is made using an aged sirloin. It only costs £10."

Other dishes on the menu include Smoked salmon, edamame beans, shredded vegetables with soy and citrus; and ajoblanca chilled almond and garlic soup, fresh grapes and croûtons.

Williams - who runs the five star hotel as general manager - was originally told that people would be able to sit down to eat their food in the hotels expansive grounds but the local authority changed its mind at the last minute.

"There's a lot of confusion around at the moment. It's a shame because we have a lot of space and a few guests were asking if they could go into the garden. It's very much a takeaway offer at the moment."

Williams and Keating are hoping to re-open the hotel on 4 July. In celebration of Keating's recent success on Great British Menu​ The Dining Room will offer a a menu comprised of all the dishes he cooked on the show.
