Marc Hardiman joins Galvin At Windows as head chef

Marc Hardiman has been appointed head chef at the Galvin at Windows restaurant in the London Hilton on Park Lane.

Having previously cooked at The Ritz Hotel, Hardiman's career includes more than 10 years of 'senior level experience', working at multi-Rosette and Michelin-starred establishments in both the UK and Australia.

They include stints as executive head chef at the four-red-AA-starred Great Fosters Hotel in Surrey; and executive chef at the five-red-AA-starred Bovey Castle in Dartmoor, Devon.

It is understood Hardiman has replaced Joo Won as head chef at Galvin at Windows.

"This is a really exciting move for me, joining [the] team at such a pivotal moment in our industry," says Hardiman. 

"I am all about championing quality sustainable seasonal produce.

"Our reopening menu is inspired by the incredible ingredients found in the great British larder as well as my travels, designed to deliver maximum flavour and hopefully nothing but true satisfaction and happiness for customers.”

Set to reopen on 1 August following the Coronavirus lockdown, Galvin at Windows' new menu will feature Portland crab, heirloom tomatoes, fresh almonds; Anjou pigeon farci à gratin, celeriac, damson, black olive, and apple tarte tatin served with Tahitian vanilla ice cream and Calvados.

“We are thrilled to have Marc on board with us, bringing his inspired ideas for new and exciting dishes to showcase to our customers as soon as we reopen our doors," says chef patron Chris Galvin of the new appointment. 

Back in February it was announced that Peter Avis would replace Fred Sirieix as general manager at the Galvin at Windows​, after Sirieix left the role​ in December 2019 after 14 years overseeing front of house.
