Will Dennard and Jack Southan are to launch small plates restaurant Med in the central Brighton site that was most recently home to Indian restaurant Chaula’s.

The pair are the former owners of street-food inspired franchise Wolfsmouth and were also co-owners of The Paradiso Social on Preston Road.

Slated to launch later this week, Med will have 30 covers and serve a menu inspired by the Mediterranean coastline.

The launch menu includes clams with vinho verde and chorizo; charcoal roast lamb belly with smoked anchovy and tomato salsa; Lebanese flat bread with baba ganoush and smoked mushrooms; and chocolate and coffee tart with hazelnuts.

“We’ve always loved and been inspired by Mediterranean food and we thought that mixing up the influences from the coastline would give us more scope to play with our menu as well as combining unique dishes from a variety of places,” says Southan, who picked up the keys the day lockdown was announced.

The pair have readjusted the planned layout to make the restaurant ‘Covid-19 friendly’.

On 2-3 Little East Street in Brighton’s The Lanes area, the site was previously home to Rasa and before that Momma Cherri’s Big House.
