Sushisamba to launch rooftop Edinburgh restaurant in 2022
The two storey restaurant and bar will be the upmarket yet casual brand’s third UK location and its first outside of London, joining Amsterdam, Las Vegas, Dubai and two London sites in the City and Covent Garden.
The restaurant will feature a main dining room with views of Edinburgh’s skyline, a bar and lounge, chef’s table, and outdoor terraces.
As the name suggests Sushisamba fuses Japanese and South American cuisine, specifically Brazilian and Peruvian cuisine.
It opened its debut London restaurant atop Heron Tower in 2012 and a further restaurant in Covent Garden in late 2018.
“Sushisamba will bring a new level of energy and excitement to Edinburgh, showcasing a joint vision and innovative concepts not yet seen in the Scottish capital,” says Ed Webb, the director of development management for St James Quarter.
“From the start, we’ve focused on ensuring St James Quarter attracts world-leading brands and securing Sushisamba for the rooftop of W Edinburgh matches this ambition."
Omar Gutierrez, chief operating officer of Sushisamba, says that Edinburgh’s international appeal make it a natural fit for the brand’s third UK location.

Other F&B brands confirmed for the 1.7 million sq ft city centre development include Five Guys, The Alchemist, @Pizza and the recently signed Bonnie & Wild.
