Tonkotsu will open its 12th site in the capital next month, in Walthamstow.

The menu at Tonkotsu Walthamstow will feature the brand’s signature tonkotsu ramen as well as its chilli chicken ramen; vegan mushroom miso ramen; chicken kara-age; and varieties of gyoza such as classic pork, ginger and garlic, as well as king prawn, and shiitake and ginger.

It will also feature a new vegan cauliflower version of its wings.

The ramen specialist will be replacing its traditional ‘£5 ramen’ soft launch that often leads to long queues outside its new venues with a new online lottery where anyone who registers will receive a £5 voucher to use at the restaurant within the first three weeks of opening.

In addition, 30 people will be picked at random to receive a £50 voucher. Guests will be able to use the vouchers for dine in as well as for Tonkotsu’s new ‘Click and Collect’ service.

Tonkotsu was launched in Soho in 2012 by co-founders Ken Yamada and Emma Reynolds. It operates 12 restaurants (including Walthamstow) in London and a further restaurant in department store Selfridges in Birmingham.

Last year the group announced that it was planning for further expansion following a £5m investment from YFM Equity Partners.
