EggRun looks to crack London market as it eyes significant expansion

New fast casual concept EggRun is planning to open up to 15 sites in the next three years.

The egg-focused breakfast and brunch brand is set to launch its first permanent location in early March on Fish Street Hill in London's Monument, with at least two further sites planned to open in the next 12 months.

Founders Laurent Manuel and Asher Grant say they plan to build a portfolio of up to 15 sites by 2023, but it is not known at this time whether all further locations will be concentrated in the capital.

The pair initially launched EggRun as a delivery-only brand earlier this year. 

The concept is somewhat similar to other egg-focused gourmet food brands operating in the capital including Mad Egg, which also launched earlier this year and currently operates a dark kitchen site in Wood Green; and US-based casual dining brand Eggslut, which has established two permanent London locations in Notting Hill and Fitzrovia.

Designed by Mazi executive chef John Skotidas, EggRun's all-day menu is designed 'to offer a balance of health and indulgence'.

Primarily grab-and-go orientated, breakfast dishes include 'classics' such as scrambled eggs with caramelised onions, cheddar, chives and EggRun’s secret sauce; and the TacoRun with scrambled eggs, feta cheese, onion and lettuce.

Brunch options include a selection of burgers including the New Yolker – a beef patty topped with a fried egg, crispy and caramelised onions, gherkins, tomato and secret sauce; and the Beyond Run that features a plant-based Beyond Meat patty topped with fried egg, cheddar cheese, tomato, gherkins, lettuce and secret sauce.

All are served in brioche buns and available with the option of vegan eggs and cheese.
