Exclusive Collection to open two ‘hyper-local’ restaurants this spring
Hillfield Restaurant & Bar at Pennyhill Park in Bagshot is named after the earliest historic reference to the land, ‘Pennyhillfield’ and is described as being ‘an ode to Surrey produce’ with a ‘farm to fork, nose to tail’ philosophy.
Heading up the kitchen will be chef Lewis Russell who has created a British brasserie-style menu.
Located in the five-star luxury resort it will sit alongside the hotel’s Michelin starred restaurant Latymer as a more casual destination. Menu items will include include local beef short rib arancini; venison wellington; and Hillfield hot pot. There will also be a daily ‘Surrey Grill’ specials board, weekend brunches and traditional Sunday roast platters.
A dedicated cheese bar will also be on offer featuring a rotating selection of local artisanal cheeses and predominately British varieties.
The hotel says there will be a particular focus on working with farmers who preserve and enhance the landscape with a commitment to high welfare and sustainability.
The Wellhouse at Lainston House in Winchester will be a casual evening-only ‘immersive dining experience’ focused on seasonal wood-fired cooking.
Head chef Phil Yeomans will take inspiration from the hotel’s large kitchen garden with an approach described as ‘combining kitchen innovation, tradition with a twist, fun, casual and personalised hospitality, and a unique sense of place’.
The developments form part of Exclusive Collection’s wider commitment to reinvesting back into the properties and creating truly original concepts that appeal to their local audience as well as hotel guests.
