Former Marcus and Alain Ducasse at The Dorchester chef Ash Finch is to head the stove at an upmarket new pub restaurant within Camden Market.

The Farrier is slated to open within a Grade II-listed former horse hospital and stable this spring

The 90-cover venue will offer a menu that includes the likes of game pie; beef fat cured mackerel; and smoked wild pigeon and salt baked squash.

Local drinks producers including Camden Town Brewery and Half Hitch Gin will feature on the menu alongside small production and organic wines and bottled and canned craft beers.

Featuring a hidden courtyard with outdoor heating and a fire pit, The Farrier will retain and restore the building's existing features, which include exposed brickwork and cast iron fixtures and fittings.

The business is being launched by friends George Hartshorn, Chris Gibson and Ollie Patterson who have a background in both hospitality and the music industry.

“Some might call us crazy to be opening a new pub and restaurant during such uncertain times,” says Patterson. “It’s definitely been a rollercoaster of a challenge.”

“But when London comes out the other side, which we’re confident we will, The Farrier will be ready to welcome Londoners with open arms for quality comfort food, wine and good times.”

“We are very excited to be opening The Farrier, Camden’s first-ever pub and restaurant," says Maggie Milosavljevic, commercial director at Camden Market's operator LabTech.

"Through such a challenging time, we have continued to work closely with all our traders and have been committed to adapting our market to help encourage and support the return of our local community."

The announcement of The Farrier follows recent news that Philippe Conticini, Café De Nata, Ugly Dumpling, and Indian Alley have also recently joined Camden’s food and beverage offering.
