Chef Jun Tanaka is opening a fine dining restaurant in Hong Kong next month.

Called Salisterra, it will be located on the top floor of design hotel The Upper House in Hong Kong’s central business district.

Opening mid April on level 49 of the hotel, Salisterra takes its name from the Latin words ‘salis’ for salt and ‘terra’ for earth, and will serve a Mediterranean menu inspired by the coastal cuisines of France and Italy in a neighbourhood bistro-style setting.

The Upper House is part of the House Collective group of venues that also includes The Opposite House in Beijing, The Upper House in Hong Kong, The Temple House in Chengdu and The Middle House in Shanghai.

Tanaka is chef-patron of neighbourhood restaurant The Ninth, located on Charlotte Street in London’s Fitzrovia, which focuses on simple yet refined Mediterranean-style cooking.
