His new venture, called Amethyst, will be an intimate 24-cover restaurant offering three and four-course menus at lunch, with Carlo’s 'signature' six and 15 course tasting menus available at dinner.
For the culinary curious, a chef’s table accommodating six diners will provide a rare insight into the workings of a high-end kitchen with guests having the opportunity to not only interact with Scotto, but also be able to prepare a dish under his tutelage.
"It has been an ambition of mine to open in Mayfair and the pandemic has given me time to find the perfect site and redevelop my menus," says Scotto.
"I can’t wait to share my new dishes with diners come the autumn.”
Scotto, who previously worked under Angela Hartnett at Murano in Mayfair and also at Galvin La Chapelle in Spitalfields and Babbo in Mayfair, opened fine-dining restaurant Xier, his debut solo venture, back in 2018.
Divided into two distinct spaces, the restaurant drew inspiration from Naples-born Scotto’s upbringing and travels through Europe and Asia, and was described as being ‘a take on modern European with a global influence’.
