Red & Blue Restaurants to launch French bistro Bouchon on former Rocket & Ruby site.

Liverpool-based group Red & Blue Restaurants is to convert its Rocket & Ruby site on Castle Street and relaunch it as French bistro Bouchon.

Set to open in mid-July, the relaunch will follow six-figure redevelopment of the site, and will create 30 new jobs according to the group. 

Red & Blue Restaurants is owned by Paddy Smith and Jonathan Poole, the latter of whom also founded Mediterranean casual dining chain Ego, which operates 12 restaurants across the North West.

Across Liverpool, Red & Blue also operates tapas bar Salt House; small-plates restaurant Bacaro; and Hanover Street Social brassiere and bar.

“Bouchon is our latest creation and we’re both very proud of the concept and quietly confident that our existing customers across Bacaro, Salt House Tapas and Hanover Street Social will become fans too,” says Poole.

Dishes set to feature on the Bouchon menu include oysters; classic French onion soup; charcuterie boards; rotisserie chicken; and sole meunière

The dessert list, meanwhile, will include tarte tatin; and chocolate fondant.

“It’s an exciting time for the company after a lousy 14 months of inactivity for us and all of our colleagues in the industry," says Smith.

"We’re so pleased to be back and for myself and Jonny, Bouchon is a culmination of all the good things we’ve learned about hospitality over three decades with our roots steeped in French cuisine.”
