Cameron House Hotel bolsters culinary team with five new appointments

Five senior chefs, including former Holborn Dining Room head chef Mark Drummond and former head chef at Cairn Lodge David Lilley have joined Cameron House Hotel for its reopening in August.

Drummond will join Cameron House as executive sous chef, where he will support in overseeing all of Cameron House’s fine dining venues with a particular focus on the Cameron Grill. He will be accompanied by Vinny Tzortzis, Cameron Grill head chef.

Lilley, whose previous roles have included head chef at The Adamson and head pastry chef at the Michelin Star Peat Inn, has been appointed head pastry chef at the Scottish hotel and resort. He will work alongside pastry sous chef Martin Goldie.

“Pastry has always been my passion and I believe that Cameron House will be the platform to allow me to grow and push the boundaries of my capabilities and allow me to reach new heights within my career,” says Lilley.

Michael Williams, meanwhile, has re-joined Cameron House as meeting and events head chef, a role he previously held for seven years.

Commenting on the new appointments, Zoltan Szabo, resort executive chef says: ‘I believe that this is the strongest line up of senior chefs we have ever had at Cameron House. Each of them brings exceptional new talent to the team here, and we’re all looking forward to that first service together in August.”

The Scottish five-star resort situated in Loch Lomond will reopen in August with a food and drink offer that will include the Cameron Grill, Great Scots Bar, The Tavern Bar, The Boat House, The Clubhouse at Cameron and The Lobby Bar as well as new fine dining restaurant Tamburrini & Wishart​, headed up by Scottish chefs Paul Tamburrini and Martin Wishart.
