Former Julie's chef patron Shay Cooper is taking over the stoves at The Lanesborough hotel in London.

Overseeing the culinary direction of the entire hotel, which includes the Michelin starred Céleste restaurant, Cooper's focus will be on innovating the food and beverage offering.

He replaces Steeven Gilles in the role.

Cooper brings a wealth of experience to the role having worked in some of the most renowned hotels in the UK, and his accolades include earning a Michelin star for The Bingham, Richmond in 2010; and The Dining Room at The Goring in 2017.

He joined Julie’s in Holland Park in 2019 when the restaurant relaunched following a four year closure. His menu there focused on modern British cuisine and included dishes of glazed ox cheek; and aged sirloin of beef.

“We are delighted to welcome Shay to the team at The Lanesborough, where he will help to reinforce our culinary direction across the entire hotel operation," says Stuart Geddes, manager of The Lanesborough

"Shay joins a very united and strong kitchen brigade, and he will focus on bringing in innovation to enhance the culinary excellence that The Lanesborough has been globally renowned for since its opening in 1991.”
