Canadian-inspired brunch restaurant and wine bar to open in Parsons Green

Called West 4th, the 60-cover site will open from the morning for brunch before evolving into 'a chic yet relaxed' wine and charcuterie bar in the evening.

Founded by industry newcomers Livia Boumeester and Louisa Stevenson Hamilton, the Vancouver-inspired venue will serve 'quintessential Canadian staples' including poutine, pancakes, and waffle stacks.

Head chef Joseph Berney, previously of Bowley’s at The Plough in Kent, will oversee the kitchen and menu, which also includes a ‘mix n match' eggs benedict section whereby customers can pair multiple variations of the dish together like sockeye smoked salmon, smashed pea and broad bean, and Canadian maple-cured bacon.

Drinks will include a DIY Bloody Mary bar with numerous different twists and toppings available, alongside a wider cocktail selection and wine list.

The interior design will boast a natural, relaxed colour scheme and incorporate archives of iconic Vancouver landmarks.

“It’s been a challenging year for many individuals and businesses and there’s been a lot of change in the last 18 months, but we’re confident the launch of West 4th will help breathe new life into our already welcoming neighbourhood," says Boumeester.
