Northcote chef Lisa Goodwin-Allen to oversee The Stafford London’s The Game Bird

Lisa Goodwin-Allen, executive chef at Northcote, is to oversee The Stafford London’s The Game Bird from this month.

Working with the hotel’s executive chef Jozef Rogulski, Goodwin-Allen has developed a new menu of seasonal British produce drawing on her experience at Michelin-starred Northcote in Lancashire. It will mark the first time her cooking will be available on a permanent basis to diners in the capital

She will continue her role as executive chef at Northcote, another property within The Stafford Collection.  

Dishes on the new menu, which will launch of 14 September, will include starters such as a gala ‘pie’ of pressed pork, beer onions, brown sauce; and Lancashire three beets, frozen Dorset ash goat’s cheese and roasted hazelnuts; and mains of dover sole with potted Southport shrimps, and sea herbs; and butter-poached native lobster with dried tomatoes, basil and champagne. A number of The Game Bird’s most popular main dishes will also remain on the menu, including chicken kiev; Scottish venison wellington; and steak & ale steamed suet pudding. 

“I am thrilled to be working with the team at The Game Bird,” says Goodwin-Allen. “Jozef and I have created an exciting new menu that truly celebrates high-quality, seasonal British produce and I look forward to my dishes being available to diners in London for the very first time.”
