Tish joined The Stafford Collection in 2018 and soon launched Norma, a mid-market Italian restaurant in Charlotte Street. He was also responsible for developing the menus for the restaurants within the group’s St James’s hotel The Stafford London, which include The Game Bird and American Bar.
Giovann Attard will continue to lead the kitchen at Norma as executive head chef having worked their since its launch in 2019.
Northcote chef Lisa Goodwin-Allen was recently brought in to oversee the hotel’s flagship restaurant The Game Bird and will continue to lead the team there alongside executive chef Jozef Rogulski.

Tish is best known in the industry for an 11-year stint as chef director of Salt Yard Group, where he launched the Dehesa, Ember Yard and Opera Tavern restaurants.
