L’Enclume and Roganic chef Simon Rogan will launch a third venture in Hong Kong later this month.

Located in the city’s Wan Chai district, The Baker & The Bottleman will be a modern bakery by day and natural wine bar by night.

The launch follows the success of the high profile chef’s Hong Kong-iterations of development kitchen and chef’s table concept Aulis  and Roganic (the latter now holds one Michelin star as well as a ‘Green’ Michelin star).

Billed as the city’s first modern bakehouse, The Baker & The Bottleman will have ‘sustainability at its heart’ and offer ‘a quintessential taste of British bakes with a Simon Rogan twist’.

The venue will be overseen by Umbel Restaurant Group executive chef Oli Marlow.

In the evening, The Baker & The Bottleman’s upstairs space transforms into a relaxed and casual wine bar serving natural wines alongside snacks, cold cuts and cheese.

The natural wine list is has been created by the Roganic team – overseen by Master Sommelier Pierre Brunelli – with the aim to introduce ‘a unique portfolio of natural, organic and biodynamic wine growers to Hong Kong’.

“We are advocating traditional baking techniques that have been around for hundreds of years, as well as low- intervention wine-making,” Rogan says.

“We aim to serve natural ingredients within a fun and modern space that caters perfectly to the metropolitan lifestyle – for the forward-thinkers who are ready to set an example and make a change.”

Rogan will celebrate 20 years of his Umbel Restaurant Group early next year.

BigHospitality will publish a full interview with Rogan early next year.
