Marcus joint chef patrons Mark and Shauna Froydenlund to leave the restaurant

Marcus joint chef patrons Mark and Shauna Froydenlund are leaving the restaurant after more than a decade and a half in the kitchen of the Michelin-starred Belgravia restaurant.

The husband and wife are returning to Northern Ireland to raise their family and take over the running of a family restaurant, while looking for a space of their own. Their last service at the restaurant will be on Saturday 29 January.

Marcus head chef Craig Johnston, winner of Masterchef: The Professionals 2017, and senior sous chef Jack Hazell, will head up the kitchen going forwards.

In a statement the restaurant said: “We will miss them dearly, but Mark and Shauna’s legacy will remain in the fantastic team they have nurtured over their time in our kitchen. They will always be part of the Marcus Wareing family.”

Mark and Shauna both joined the restaurant at The Berkeley hotel when it was still Petrus, in 2007 and 2006 respectively. Mark, from Leigh-on-Sea in Essex,  began  working with Marcus Wareing at Petrus soon after he finished his training at Westminster Kingsway, working his way up from commis chef to head chef when it was renamed Marcus Wareing at The Berkeley.

Shauna, who is from Londonderry in Northern Ireland, has worked with Marcus her whole chef career, and has held roles including demi chef de partie on the pastry section before being named chef patron.

The couple were named joint chef patrons at the restaurant in 2017.
