High-profile pastry chef Cherish Finden will open a standalone, Singapore-influenced pâtisserie at Pan Pacific London next month.

SHIOK! (pronounced shook) will be located adjacent to the City hotel in Devonshire House and has been designed by Tom Dixon Design Studios. 

The new venture will combine the ‘traditional flavours of Finden’s childhood in Singapore with her signature flare, bringing a taste of Singapore to London’. 

Finden was named executive pastry chef of Pan Pacific London ahead of the 237-bedroom hotel’s opening last year​ and has already launched The Orchid Lounge, which offers a ‘seasonally-inspired’ afternoon tea that’s paired with English sparkling wine. 

The appointment marked Finden’s return to the Singaporean-based international hotel group, with her first professional position having been at Pan Pacific Singapore in 1991.

Open from 7am to 6pm Monday to Friday and from 10am to 6pm Saturday to Sunday, the 25-cover patisserie will serve breakfast as well as sweet treats throughout the day which guests can either enjoy in situ or to grab-and-go.

The space will feature a counter stocked with cakes, pastries and chocolates. Key menu items will include a selection of petit gateaux shaped like handbags and teapots and ‘kopi tarik’ - a take on Singapore’s famed ‘pulled’ coffee with condensed milk served with an edible spoon and cup. 

Sweet breakfast items will include fluffy milk buns with options including coffee, pandan and summer berries. 

Savoury items will include sausage shokupan and pork floss buns. Classic Viennoiserie and croissants will also be available.

The drinks menu will be focused on bubble tea, fresh juices and Champagne. 

“In Singapore the word SHIOK! conveys a feeling of pure pleasure and happiness and this is what I want to capture,” says Finden.

“The patisserie is going to be somewhere you will want to bring your loved ones, any time throughout the day for an out-of-this-world pastry. I’m so looking forward to Londoners experiencing what we have in store.”
