Tom Sellers to open a restaurant within 1 Hotel Mayfair
The chef-patron of two Michelin-starred Restaurant Story in Bermondsey is partnering with the hotel group for its first European property, located overlooking Green Park. The as-yet unnamed restaurant will be a departure from Story with a heightened focus on sustainability, local and organic ingredients.
“I look forward to bringing this new project to Mayfair. 1 Hotels’ unrivalled focus on sustainability and their innovative approach to hospitality is a natural fit with my own food ethos - by partnering with them together we can push the boundaries of zero waste, conscious creativity,” says Sellers.
“I have always loved classical cooking and I feel now is the time to present world class produce sourced sustainably and celebrated in the season we find it. The philosophy will be underpinned by knowledge and executed with creative thought and detail.”
Alongside the new restaurant, the nine-story hotel will house 181 guest rooms, a bar, a café and a fitness and wellness centre. The hotel is being developed in partnership with Crosstree Real Estate, the real estate investor behind hotel projects such as The Standard, London in Kings’ Cross and Mama Shelter London Shoreditch.
1 Hotels’ global portfolio of properties includes hotels in New York, Miami, and Los Angeles, with projects under development in Hanalei Bay, Nashville, San Francisco, Crete, Paris, Copenhagen and Melbourne in the pipeline.
