Former The Palomar head chef Tomer Amedi will launch Levantine restaurant Pascor in Kensington this month.

Described as serving playful cocktails, explorative wines by the glass and Levantine small plates, the menu will showcase Amedi’s ‘modern interpretation of Levantine flavours’, paying homage to classical combinations with a ‘London-influenced’ twist.

Meaning ‘to indulge’ in Latin, Pascor will serve a menu of food cooked over flame. Signature items will include samneh challah with whipped Za'atar butter, and smoked black tahini (pictured below); samneh butter scallops with charred leek cream, merguez gremolata and lemon balm; kombu-wrapped halibut with pickled kohlrabi, tarragon, chilli almonds; an Egyptian duck breast salad made with- cucumber, pickled carrot, coriander and dukkah; and charcoaled wagyu skirt with bone marrow, pomegranate with coriander and watercress chimichurri.

Desserts will include chocolate and tahini crémeux, made with milk and pistachio crumble and blueberry sauce as a reimagining of the traditional English crumble; and a Coconut ‘Beirut meets Bangkok’ malabi with pineapple, kadaifi, basil and coriander seeds inspired by Amedi’s world travels.

The restaurant will be split over two floors, seating 50 covers with a combination of booths and long sharing tables. Downstairs will have a large open kitchen and a small terrace with five tables, with an additional bar situated on the first floor.

“Everybody needs to have their comfort place, where they know normal life can be put on pause for a few hours and life can be lived without a care in the world - somewhere where others will look after you, they will make you laugh, smile, feed you well and make sure you are having a great time,” says Pascor owner Tati Rurenko.

“I love Tomer’s approach and knew I wanted to work with him to recreate the same feeling for the people of Kensington and we’re excited to welcome the guests and make them feel amazing.”

“I’m so excited to bring some fantastic vibes, delicious food and exceptional wine by the glass to our fellow Kensingtonians, they deserve to have a fun place to go out to at a walking distance,” adds Amedi

Pascor opens on Monday 20 June.
