Covino team to open wine-focused rooftop Manchester restaurant

The team behind Chester restaurant Covino are to open a wine-focused rooftop restaurant in Manchester this autumn.

Called Climat, it will open on the rooftop of Blackfrair’s House in the city and will have glass-fronted cellar of around 250 different wines, with a slight lean towards Burgundy.

The restaurant will have a kitchen counter and an outdoor roof terrace that offers panoramic views of the city. There will also be a curtained off 12-cover private dining room.

It will serve a daily changing food menu and will also house beehives that will enable the restaurant to make its own honey.

Covino was founded in 2016 as a small wine bar and shop by Christopher Laidler with head chef Luke Richardson cooking a menu of ‘Parisian ex-pat food’. In 2018 it moved to larger premises in nearby Northgate Street.

Climat, which takes its name for the French word for ‘climate’, in reference to its importance in the wine-making process, is expected to open October ‘Manchester’s famous weather permitting’.

The team says it wants Climat to be ‘Manchester’s go-to for the worlds’ best chardonnays, pinot noirs and all that sits between’.

‘Our aim is simply to become one of Manchester’s most enticing restaurants,’ it says.
