What happens when you take the menu of an established French restaurant group and place it in to a traditional English pub?

For the latest in our In Operation With... video series, we caught up with Mark Derry, CEO of Brasserie Bar Co, to talk about the ongoing expansion of the White Brasserie brand.

The now 13-strong group was created by transferring the menu from the Brasserie Blanc chain in to a more casual pub setting.

“The word brasserie is French for brewery, so there’s quite a strong connection between traditional French brasseries and English pubs," says Derry.

Speaking from the group's Barley Mow site in Egham, Surrey, Derry also elaborates on White Brasserie's recruitment policy, and why this often means hiring the children of their own customers.

The first Brasserie Blanc opened in 2006 as part of a partnership between chef Raymond Blanc and Derry, who launched its sister White Brasserie brand after buying two pubs in 2014.

Brasserie Bar Co is the parent company to both the White Brasserie and Brasserie Blanc groups.
