Atul Kochhar has doubled his presence in the affluent Buckinghamshire town of Marlow with the opening of Vaasu today (10 July) in the site that was once home to veteran Italian restaurant Villa D’Este.

Initially open for takeaway only, the Chapel Street restaurant will offer “sensational Indian plates inspired by his intrepid travels across India” with a focus on the north of the country, specifically Punjab, Delhi and Rajasthan.

Kochhar is yet to announce when the 80-cover space will be open for eat-in, but promises a “relaxed and welcoming” environment when it does.

Dishes from the takeaway menu include makai aur gosht ki seekh (minced lamb kebab with mint chutney), kurkuri macchi amritsari (crisp fried spicy tlapia with tomato chutney); jhinga tawa masala (prawns pan fried with ajwain, onions and peppers); and lasooni saag gosht (lamb with spinach and garlic leaves).

“The states across India offer a bounty of beautiful flavours, aromas and spices – from places where the tandoor oven and tawa griddle are kitchen essentials,” says Kochhar. “Our new restaurant Vaasu brings all of this inspiration together, celebrating the life and culture of India through a menu of magnificent dishes.”

“We will give guests the opportunity to experience charming Indian cuisine in their own homes and to take-away until we can open this new casual and quirky setting.”

The three other sites within the Atul Kochhar Restaurants portfolio all opened on 4 July including the recently refurbished Sindhu at the Compleat Angler Hotel in Marlow.
