Brighton’s Kindling restaurant relaunches as a steak specialist

Brighton restaurant Kindling has reopened with a focus on steaks following a six month hiatus.

The new iteration of the East Street restaurant will offer a tight menu of steaks cooked simply over charcoal by a team led by new head chef Ewan Cullen. 

The 46-cover restaurant launched in 2020​ serving food that’s ‘kind to the environment and good for the soul’.

In October last year, owners Ramin and Jane Mostowfi announced that the original sharing plates concept that had been created by chefs Holly Taylor and Toby Geneen was no longer viable due to ‘rising costs and ongoing challenges faced in our industry’. 

Steak options include bavette, ribeye and denver served with a choice of sauces that includes peppercorn, chimichurri, and blue cheese. 

There will also be a specials board offering larger steaks to share. 

There is also house double patty burger made with smoked streaky bacon and Applewood cheese in a toasted brioche bun as well as a slow-cooked beef brisket roll.

Two desserts are offered: a molten chocolate pudding with hazelnut ice cream, and passion fruit and mango cheesecake.

“Rekindling from the flames, Kindling will serve great steak, cooked simply over charcoal,” the Kindling’s newsletter reads. “Our short and sweet menu of high-quality ingredients, locally sourced where possible, is cooked by and his team over live fire in the open kitchen in the middle of the restaurant. 

“We want our menu of supreme quality beef, flawlessly prepared and served by our knowledgeable and kind team to be great value, affordable and delicious for all.”
