Tech-driven restaurant Inamo re-located its St James's site to Covent Garden last week and BigHospitality was one of the first to see it.

In this exclusive video Inamo co-founder Noel Hunwick discusses the restaurant’s new technology and whether robot waiters could ever replace front-of-house staff.

Hunwick said: “The technology we had at the first two Inamo restaurants was projected on to the table surface so [diners] ordered using touch panels embedded in the table. We’re actually changing slightly – we’re maintaining the projections on the table but guests are also going to do the predominant amount of their ordering through tablets.”

Hunwick also explained that though technology was continually advancing, human service would always remain a key part of the restaurant.

“We see the technology as adding to great service rather than removing human service,” he said.

“What we’re looking for is to introduce technology that enhances the guest experience in terms of them being able to more seamlessly order what they want when they want and also call for the bill when they’re ready to leave.”

Hunwick also revealed how he hopes Inamo's technology will evolve in future and how the gadgets will provide the restaurant with additional revenue streams.
