Former Racine chef-patron Henry Harris is to take up the reins as chef-patron of Buckinghamshire bar and restaurant The Dog & Badger.

Harris, who closed the doors of his Knightsbridge-based French restaurant last year after 13 years of trade, helped create the new-look restaurant and bar in Medenham, which re-opened last year.

He said: "I was fortunate to be involved in The Dog & Badger’s inception, helping with the concept and design, so naturally I am delighted to be taking up the reins here. I’m looking forward to bringing a touch of French bourgeois cuisine to the countryside of Buckinghamshire.”

Harris, who will remain as consultant to The Groucho Club in London while running the Dog & Badger, plans to stick to his trademark French cuisine when he joins at the end of the month.

The Dog & Badger's menu will focus on 'the best of French country cooking, with the odd British classic' with dishes to include Duck confit with lentils, British hake with asparagus and beurre blanc and Dorset lobster from the wood oven with garlic butter.

Harris plans to source produce locally with much of its fresh produce grown on the restaurant's 12 on-site vegetable plots. The restaurant will also stock a 450 bin wine list.

Later this month the restaurant, located in a former pub between Henley-on-Thames and Marlow - will also open six suites within a neighbouring Grade II listed cottage, formerly an ale house.

The Dog & Badger was run as a pub until 2013. In 2014 Nick and Jane Robinson bought the freehold from Enterprise Inns and started work to revamp the building and turn it into a contemporary restaurant and bar.
