Chef Paul Tamburrini is launching his first Edinburgh restaurant

Chef Paul Tamburrini is to launch his first restaurant at the Macdonald Holyrood Hotel in Edinburgh this autumn.

The native Glaswegian has left his role as chef director at Martin Wishart’s The Honours Brasserie in Edinburgh and signed a deal with Macdonald Hotels & Resorts to launch the 80-cover site.

Bistro Deluxe by Paul Tamburrini will offer French cuisine cooked with local Scottish ingredients, and could potentially open across Macdonald Hotels’ 45-strong UK portfolio if successful.

“It will be a superb dining experience and once established, we have ambitions to build on what will undoubtedly be a successful venture by rolling it out in some of our other hotels across the UK,” says Ruaridh Macdonald, deputy chief executive of Macdonald Hotels.

Tamburrini trained with Marco Pierre White at L’Escargot in London before cooking at Michelin-starred Restaurant Martin Wishart in Leith and Glasgow’s Hotel du Vin at One Devonshire Gardens.

He described the deal with Macdonald Hotels as a ‘once in a lifetime’ opportunity.

“Being part of a hotel environment is second nature to me and I’m very proud to be taking this next step in my career,” says Tamburrini.

“I’ll be recruiting a team of talented chefs and I’m looking forward to creating a progressive and forward-thinking restaurant.”

Tamburrini is the latest big-name chef signing for Macdonald Hotels, which hired former Scottish Chef of the Year Tony Borthwick to head up the kitchen at the Macdonald Rusacks Hotel in St Andrews last year.
