Nathan Outlaw’s Michelin-starred London restaurant, Outlaw’s at The Capital, Knightsbridge, has appointed Cornish-born Tom Brown to be its new head chef in a restructuring that sees Pete Biggs promoted from head chef to executive chef for Outlaw’s restaurant group.
Brown spent time working at Rick Stein’s Seafood Bar and St Kew Inn near Bodmin, Cornwall, before joining Outlaw at St. Enodoc, where he worked as head chef for three years.
His menus will consist of Cornish fish caught by fishermen that he knows well, and will be dictated by the daily catch.
Outlaw said: "I'm really happy to see Tom make the move to Head Chef at Outlaw's at The Capital. His passion for cooking is amazing and I can't wait to see him flourish in his new role in London."
