Francesco Turrini is now bar manager at the Shanghai Bar at Hutong, the northern Chinese-style restaurant in London skyscraper The Shard. Turrini has helped create a range of new cocktails for the bar with a view, having worked closely with head chef Bing Luo to use at least one of the kitchen’s five key spices in each drink: coriander, aniseed, ginger, clove, and pepper.
