Dominique Corolleur, Restaurant Manager, Collette's
The Grove in Hertfordshire, London’s country estate, has appointed Dominique Corolleur as Restaurant Manager of Colette’s, the resort’s elegant fine-dining restaurant.
An accomplished Restaurant Manager with over 20 years’ experience, Corolleur joins from Marcus Wareing’s Gilbert Scott in London, where he was the opening Manager. Before that he held key positions at an impressive portfolio of Michelin-starred restaurants.
He worked for Gordon Ramsay at Royal Hospital Road (restaurant manager), Claridge’s (as restaurant director), then Gordon Ramsay au Trianon Palace in Paris (operations director). Dominique returned to London to take up the role of Restaurant Manager at Hélène Darroze at The Connaught. From there he moved to management roles at Clos Maggiore, Covent Garden, The Parlour at Sketch and Gilbert Scott.
