Bar Boulud charcuterie
Having successfully persuaded members of the industry to join him in the boxing ring, Fred Sirieix turned his attention to the event itself and roped some of the UK's top chefs in to prepare food to keep the audience members fed between matches. Here is a picture of some of the charcuterie supplied by Daniel Boulud of Bar Boulud at the Mandarin Oriental. The chef saw two of his staff members - executive chef Dean Yasharian and senior maitre d' Paolo de Tarso - compete in the ring.
