Nathan Eades has been appointed as the new head chef at Simpsons in Birmingham, with the restaurant having just undergone a major refurbishment.
In a career that spans 11-years, Eades has worked at Lainstone House in Winchester, Swinfen Hall Hotel and spent a year in Vancouver working at the Wedgwood Hotel and Spa, as well as setting up his own restaurant Epi.
Eades said: "Simpsons is the mecca of cooking in Birmingham and there are many chefs who would love to be in my position.
"It’s humbling to be following in the footsteps of so many great chefs and even more exciting to be joining now, at the start of a new era for the restaurant. I’m looking forward to building on the foundations of the past and bringing in my own perspective and style.”
Luke Tipping, chief director of Simpsons, said that Eades has proven himself to be a "great" chef.
"Nathan shares our values for using the best, seasonal ingredients and I’m sure that he’ll have plenty of great ideas to bring to the table," he said.
