Marcus Clayton wins UK S.Pellegrino Young Chef Academy competition

Marcus Clayton from Hide and Fox restaurant in Saltwood, Kent, has been name the winner of the UK S.Pellegrino Young Chef Academy competition.

The 26-year-old chef from Rye, East Sussex, beat eight other finalists at the competition final, which took place at CORD in London, and which featured a judging panel that included Sat Bains and Claude Bosi.

Clayton’s winning creation was a dish of celeriac, apple and mushroom.

He will now participate in the Grand Finale that will take place in Milan in 2023 and will receive mentorship from Northcote’s Lisa-Goodwin Allen in the run up to the competition.

"I am delighted to have won, it's very surreal and I can't wait to represent the UK at the grand final<2 says Clayton.

“It's been a great experience so far, especially getting direct feedback from the esteemed judging panel. I’m looking forward to working closely with Lisa on my signature dish ahead of the next stage in Milan."
