The restaurant element of ‘immersive’ Alice’s Adventures in Wonderland-themed venue Labyrinth Waterloo will open in May.

Like the The White Rabbit in Lewis Carroll’s famed book, the venue is behind schedule with The Rosarium restaurant originally set for a September launch. 

The 96-cover space will serve elevated British dishes with an ‘added Wonderland twist’ that incorporate ‘performative and sense-heightening experiences’. 

The all-day menu will offer dishes including scampi scotch egg with asparagus soldiers; ale-braised beef mac ‘n’ cheese with Montgomery cheddar; and roast Scottish hake with butterbean, chorizo, piquillo pepper and aioli. 

The dessert menu, meanwhile,  includes molten chocolate pudding with flambé cherries; and lemon meringue and poppyseed arctic roll. 

There will also be an afternoon tea that features the likes of tandoori chicken and raita sandwiches; sausage roll royal with apple miso dip; and Queen of Hearts jam tart. 

Designed by Faber, the interiors will ‘draw from the architecture of the quintessential English gardens of Lewis Carroll’s era’. 

There will be three dining space: the central glasshouse; the indoor terrace; and a secret garden-themed PDR. 

The food will be overseen by executive chef Harvey Ayliffe, whose CV includes Le Caprice, Bentley’s and Mark Hix. 

Located underneath Waterloo Station within the part of The Sidings development that was previously earmarked for Timeout Market London, Labyrinth Waterloo is the first permanent site from newly-formed company Labyrinth,​ which is the new venture from Oliver Lansley and James Seager, creative directors of theatre group Les Enfants Terribles. 

The space is opening in stages, with 220-cover bar Underland and an immersive theatre experience based on Les Enfants Terribles’ production of Alice in Wonderland set to open later this year.
