Danielle Phillips and Dan Saunders have chosen Bath for their second The Gaff restaurant.

On Milsom Place, the launch follows the success of the pair’s original The Gaff in Abergavenny, which opened its doors in 2019.

Taking its name from the Irish slang for ‘home’, The Gaff blends ‘refined culinary craft with a warm and welcoming environment’ and offers a daily-changing menu of ‘bold and beautiful’ small plates.

The Gaff Bath is a 30-cover restaurant with a 16ft open kitchen that stretches across the dining space, allowing the chefs to interact with guests throughout their meals, as well as a four seat Chef’s Table and a private dining room, The Cwtch, which seats six guests.

Each dish is ‘rooted in the chefs’ own memories and experiences’ resulting in a menu with strong modern British influences which also takes in culinary inspiration from further afield.

Signature dishes include sticky lamb shoulder on a sourdough crumpet with housekeepers sauce; middle white pig with charcuterie sauce and pickled cabbage; and miso aubergine with soy, ginger and shiso. Dessert options include the Gaffa cake, rhubarb trifle; and caramel pannacotta with popcorn and praline.

“For us, food is all about people coming together for a shared experience, so we want The Gaff to embody this, from the dishes themselves to the service and environment,” says Phillips.

“While innovative and intricate, all of our dishes are inspired by memories and moments in our team’s lives. They take diners on a nostalgic journey that we hope will trigger their own food memories, whether home comforts from childhood or new experiences on their travels.”

Prior to launching The Gaff, the pair worked at top Welsh restaurant The Walnut Tree.
